Russian Salad

Ingredients

Blanched Mix Veg ( Carrot, Beans, Cauliflower, Potato, Green Peas) - 1 cup
Mix Fruits (Apple, Pineapple) -1/2 cup
Mayonnaise Sauce- 2 tbsp
Seasoning- To taste
Boiled Egg- 2 pcs

Method

Cut mix veg and blanch it in hot water. Mix blanched veg and fruits with mayonnaise sauce seasoning and mash boiled egg with seasoning and garnish with parsley leaf.

Mayonnasie Sauce


Ingredients

Egg yolk- 2 pcs
Oil -1/2 ltrs.
Vinegar- 2 tbsp
Mustard paste- 1/2 tbsp
Seasoning- To taste

Method

Put egg yolk in a bowl and whip it with wisk nicely. Add little drop of oil in it continiously until it absorbs oil. When it comes in thick consistency add vinegar and mustard paste with seasoning and mix well.

French Onion Soup


Ingredients
Onion Slices- 1 cup
Butter -2 tbsp
Brown Stock- 2 cup
Seasoning- To taste
Thyme- 1 pinch
Grated Cheese- 2 tbsp

Method
Heat butter in a sauce pan add slice cut onion in it and stir well until onion change its color. Add brown stock with seasoning and thyme and cook for 10 -15 mins. Fill in a soup cup add grated cheese on it and bake in oven until cheese melts. Garnish with chop parsley and serve with french toast.

Spinach with Pasta Soup

Spinach with Pasta Soup

Ingrediants

Spinach puree - 1/2 bowl
Butter             - 1 tbsp
Boiled Pasta  - 1/2 bowl
Garlic (Chop) - 1 tbsp
Stock              - 1/2 bowl
Seasoning      - To taste

Method
Heat butter in pan fry garlic till brown, add spinach puree with seasoning, add stock and mix well and cook for a while, serve in soup bowl add boiled pasta at end.

Tomato Soup

Ingredients

Tomato Puree  - 1.5 bowl
Butter              - 1 tbsp
Garlic ( Chop) - 1 tbsp
Parsley (Chop) - 1 tbsp
Seasoning        - To taste
Water              - 1 bowl

Method
Heat butter on pan fry chop garlic till brown in color, add tomato puree and cook for a while, add seasoning, add water and mix it well,cook for a while serve in soup plate with chop parsley garnish in center.

Clear Soup/ Consumme Soup

Ingrediants

Buff mince meat - 1/2 bowl
Stock                  - 2 bowl
Seasoning           - To taste
Vinegar              - 1 tbsp
Egg white          - 1 egg

Method
Add stock in pan, add Buff mince and seasoning, cook for a while add vinegar and egg white, cook some time, strain liquid and serve in soup bowl.

Cream of Chicken Soup

1. Cream of Chicken Soup

Ingredients

Chicken Boneless(Dice cut) -20 grm
Stock                                     - 1 bowl
Refined Flour                        - 1 tbsp
Butter                                    - 1 tbsp
Garlic (Chop)                        - 1 clove
Milk                                       - 1/2 cup
Seasoning                              - To taste
Parsley (Chop)                      - To garnish

Method
 Chop the boneless and skinless chicken in small cubes and boil them. After boiling strain it to dry. Heat a pan with butter fry chop garlic until golden add refined flour and stir well add stock and milk on it and mix well add seasoning add chicken dice and cook 2 to 3 minutes. Garnish with chop parsley.
